My holiday weekend was crazy fun. I spent Friday eating pizza at my favorite beach side bar. What used to be Sharky's is now Sunset Grill; same place....different name and owner.
They have started making real Italian pizza's on Friday's and HOT DANG are they good. I love them!!!!! It is now a Friday ritual; you can't eat tuna forever and not crave the good stuff:)
Saturday, I made Chicken Enchilada's & Spanish Rice for my roomies. I swear I felt like I was married again but not in a bad way:) Having someone to cook for is the only reason to cook. I took great pleasure in preparing the meal and was really happy when it turned out so well. I've never made them before and it was an experiment. It could have been an experiment in terror but instead it was delicious.
Sunday, my friend Brooke invited me to the Water Park at the PIC (Pacific Island Club hotel). Oh my gosh did we have a good time!!! I made sure to wear factor 50 sun block and then acted like a 5 yr old going down the water slide, floating in the pool, and basking in the sun. I have some fantastic photos (go check them out). I'll put a few here. We so have to do this again. Seeing Brooke go down the kidding slide backwards (by accident) was the highlight:) Her facial expressions kill me and this one was the best........full on surprise and laughter as she slid down and hit the water. I wish I had my camera for that one!!
