The recipes within the book will be a completion of family favorites, recipes handed down through the generations, and our interpretation/adaption/renditions of recipes found within cookbooks, online, and cooking classes! I've already started picking out my favorite recipes and have my Mother and Sisters writing down recipes.
I've been playing around with a calzone recipe, no I'm not making my own pizza dough but that may need to happen in the future. I actually think the filling is wonderful but the dough is the hard part. I bought the dough and doctored it up! I brushed it with butter/garlic before baking. I think I need to increase the amount and let it stand for a few minutes before baking.
I don't own a food processor or mixer. I'm somewhat old school and do most things with a bowl and spoon, or I just buy already made (pizza dough, pie crust, etc.,) I guess you can say my recipes are "semi-homemade". I don't even own a rolling pin, I know right, the foodie who likes to cook doesn't own a rolling pin. It's true though.
I also figured out how I want to make my beef enchilada's, my colleagues will be feasting on them in December.
Anyway, the calzones came out pretty good. My colleagues really liked them, so that is all that matters. My next adventure.......Shrimp Enchilada Verde and Shredded Beef Enchiladas.
The beef one will be easy but the Shrimp just popped into my head. Of course I go online and find a Shrimp Enchilada recipe and it looks incredible. I feel like such a slacker because everything that pops into my head has already been thought of by someone else.
Oh well, I'm not a chef but I sure as heck can enjoy their hard work!!
I found a shrimp recipe that looks easy and scrumptious. I'll be making it for my parents when I go home for Christmas. I can't wait to see if Mom and Dad like this recipe, if they do, it's going to the cookbook.
